English Tea Scone

Add these elegant yet easy-to-make scones to your tea time!
One of my favorite items at English high tea is scones! I always look forward to the freshly baked scones whenever I go out for some special ladies’ tea time. I am really excited when I found out how easy it is to make your own scones at home! These warm, flaky scones go so well with jam, lemon curd or clotted cream! It is so fulfilling when these are accompanied with your favorite cup of tea in the mid afternoon.

English Tea Scones
Prep Time 30 min Cook Time 30 min Total Time 1 hour Serves: 4
Ingredients
2 cups all purpose Flour
1 tbsp baking powder
3 tbsp granulated (white) sugar
1/2 tsp salt
5 tbsp cold butter
1 cup heavy cream
(Optional) 1/2 cup dried fruits – dried cranberry, blueberry, raisin etc.
Instructions
- Preheat the oven to 425°. Mix dry ingredients (all purpose flour, baking powder and sugar) in a medium bowl.
- Cut cold butter into 1/2-inch cubes.
- If you have a food processor, pulse butter and dry ingredients until mixed.
- If by hand, cut in butter into the flour until mealy, but chunks are ok. Try to keep butter cold. Add dried fruit now if you want.
- Mix in heavy cream with a spatula. Do not over mix. (for around 30 seconds)
- Transfer to table, knead for a few seconds and you can make what ever shape you want. You can make little rounds, a whole pie size. I like to make 2 balls, flatten a bit to a disc (about 1/2 inch thick) then cut them into eight wedge pieces.
- You can roll or sprinkle extra sugar on them now.
- Bake in a 425 ° oven for 12-15 mins. Enjoy!
